Apple & Chicken Panini Recipe
Barbeque chicken is a summer staple, the smoky, tender chicken tastes delicious and makes for great leftovers. Straight up chicken leftovers can be boring, so here is an awesome recipe that uses leftover chicken in a creative and flavorful way. My secret ingredient in this sandwich is Sweet Onion Balsamic Jam. The jam has its own wonderful flavor and it brings all the flavors together.
I use grated cheese because I love how it gets a nice even melt, but sliced cheese works just as well. I made this sandwich in a panini press, the bread gets wonderfully crunchy and the inside melts beautifully. If you don’t have a panini press, you can cook it like you would a grilled cheese.
My new favorite tool is the 2-in-1 Tovolo Scoop and Spread. I can get my condiments out of the jar without getting anything on my hands and it spread evenly on my sandwich. I loved that I didn’t have to use another knife.
Sliced barbecue chicken breast
1 apple, cored and thinly sliced
1 cup grated cheddar or mozzarella cheese
4 tbsp sweet onion balsamic jam, divided
Use a pastry brush to coat one side of the bread with olive oil. Place oiled side of bread down and layer on the cheese, chicken, apple and jam. I use 1 tbsp of jam per sandwich, but feel free to add more or less depending on your taste preferences. Oil the second piece of bread.
Place sandwich in the preheated panini maker, make sure the oiled sides of bread are facing either side of the grill. Press down and keep an eye on the sandwich. A hot panini grill will cook your sandwich quickly. Once the cheese is melted and your bread is crispy, your sandwich is ready to eat! It will be hot when you remove it from the panini grill.
